since we have uneven number of participant, you'll likely be assigned to one of Secret elves. So it's fair I close signups right now.

I'm not sure what scheme you are using, but Secret Santa works with any number of participants (larger than 3), whether even or odd. Here is an example with five:
A gives to B
B gives to C
C gives to D
D gives to E
E gives to A

I was about to say the same. You don't need an even number of participants. And if the giftees have already been assigned, at least a part of them could be reshuffled, to let the newcomers in (deadline for signing in was Dec 16th, if I remember correctly, so he should be allowed to join)
Even if some of us have already bought the gifts, as they haven't been redeemed we could always ask for a refund and buy something different.

Yes, I did. But as usual I closed it earlier. I never meant to exclude the guy, just sent one of secret elves his way, so he still gets the gifts.

That's the kind of thing I don't get... why even have an end date when you're so loose about it? Why not just set f.ex. 1200 GMT 16th of December so everyone knows exactly when it's closing?

Exactly. Why post a deadline if you won't adhere to it? People may depend on it one way or another for whatever reason, and if you posted something... nebulous or vague it would at least be fair (Hey, I said it could end anytime this week). I usually use interest in my giveaways as a caveat. I post a close date, and usually modify that with it will close earlier if the thread goes 48 hours without a new entry.
