is there an option in the game where you can switch-off the borders that can be seen in the screen shots, or perhaps play in 16:9 ?

Yes you can turn them off. I saw a couple of Streams where people changed them back to only having black borders so it would not distract them while playing the game.

You can choose between different border images or just switch to black bars. I didn't see a "true" 16:9 option, but there is one to stretch the image to fill the screen.
