I haven't looked at the sandbox mode, but with custom games you mostly have options for biome/map size/resource distribution. The biome selection is pretty neat, since you have quite a few options that you can mix together if you want, e.g. start with flat and then add canyons, then rivers, then ridges, and hey throw some islands in there too.

The screen options are windowed, or borderless window.
