Ok guys, I really want to play No Man's Sky when it comes out, but I am currently playing on a Macbook Pro El Captain 10.11.13.

I haven't downloaded GOG Galaxy yet, but does it support cross-platform play? I.E. Will I be able to play Windows-only games on GOG Galaxy if I'm actually on my MacBook, or no?

If you are referencing the advertised feature "cross-play", then no, that's not what cross-play means. Cross-play means you can play with friends who use the Steam version of the game.

Of course, many games only released for Windows do work in Wine and its various wrappers so you can play them on OS X or Linux, but Galaxy doesn't work very well in Wine and you can't download games for other platforms through Galaxy (or it did, and you couldn't, the last time I tried), so you'll be better off using the stand-alone installer in those cases.

Also, many games available for OS X and/or Linux on GOG are actually Windows or DOS versions pre-packaged with Wine or DOSBox so you don't have to think about it (but each such case requires the publisher's permission that GOG do package it for Linux and/or Mac).

I have no idea whether No Man's Sky will work in Wine though.

Windows-only games can be played only on computer/laptop with Windows.

It does not matter at all if you are using Galaxy or not. Since the client does not change anything in regards of what platforms a game will work on, since that only depends on the game. The client is independent of that.
So you need to check the gamecard of the game and see if the OS you want to use is supported.

So for the game you are talking about the gamecard only shows a Windows support and no Mac support.

I'm not to big into coding (yet), but do y'all think there would be any way to import 'No Man's Sky' into Wine via wrapper? I'm not actually 100% on how Wine wrappers actually work, so any advice or guidance would be greatly appreciated!
Maybe you can try playonmac. I use playonlinux and it is very easy to use

No coding. As maestroruffy mentioned, is one option, another is [url=http://winebottler.kronenberg.org/]WineBottler. CrossOver is a third, this one isn't free but there is a 14-day trial so you can see if it works, also Codeweavers at least have a support department you can get official answers from, and you're financially supporting the development of Wine.

Again though, I cannot guarantee that the game will run under Wine at all. And until it's released and tested, no one can beyond Paradox, and they aren't likely to check.
