I have installed D:OSEE with GOG Galaxy but there is a problem: When i try to launch the game, a little message pops up and tells me that the game ''is an invalid Win32 application''. Can someone explain to me what to do please?

It means you didn't read the system requirements: 64 bit OS (Win 7 SP1, Win 8.1, or Win 10). So, yeah, gonna need to upgrade your OS.

Divinity 2 original Sin2 - Definitive Edition: framerate drops to 0 every 5-10 seconds

Worked fine before the 'upgrade' to Definitive Edition. Game is not playable anymore as every 5-10 the game starts to stutter, frames drop to 0 until it recovers and runs smooth after another 5s...until it stutters again.

I've seen plenty of other forums complaining about this.

You mentioned "forums" but you may not be aware of GOG's game specific forums: gog.com/forum > search game series or game title in bottom left bar, like "divin" in this case. You may want to search that forum, or you can try asking Support but since it's a new game, fixing the problem may up to the devs, not GOG.
