I've been noticing MacOS games are being removed from the store lately, games like Tex Murphy series etc.

Was this due to the fact that since they will no longer run on newer Macs with Catalina (64bit Only), they were pulled in order to prevent people from wanting returns when they didn't run? If the games were pulled due to no longer having future compatibility, why can't they be kept with warnings that they require 32bit support?

I previously purchased the Tex Murphy series for my MacBook, but can no longer download it. Thankfully I had the Tesla Effect backed up, but it would be nice to get a copy of Under a Killing moon which WAS supported on 32bit Macs. Bring them back!

That is strange. Even games which are no longer supported on Mac should still have their Mac versions downloadable from your account if you previously owned the game. (I can confirm this from personal experience, although not for the Tex Murphy games in particular because I don't own them).

*Note that I am referring to downloading the games using your browser (https://www.gog.com/account), I do not use GOG Galaxy and I do not know whether or not this applies to Galaxy.

If the games did previously have a mac version which has now disappeared, I would recommend putting a support ticket into GOG.

You still can (see screenshot for example).

Ok, I was wrong about the downloading part. If you OWN Tex Murphy you can still download it, however if you search for Tex Murphy Under a Killing Moon in the store (as an example), it's no longer available to buy for Mac. I guess this is why I originally asked, because you can see from my attached pictures, on the store, it says for Windows and Linux only, but under my Downloads, it's available for Mac. So why the removed support from the store?

Likely because it's not compatible with macOS 10.15 and higher.

I'm assuming that's probably the reason, but they could still offer the Mac Games for sale with a warning that 10.14 or lower is required. There were a few MacOS games I wanted to purchase, now I can't, and I have 10.14 so I could run them.
32-bit only Mac games no longer have Mac listed as available OS at all, and this has happened for quite some time now. You can typically see that a Mac version does exist if there's a notice that it's 32-bit only and won't work on 10.15 and higher under the Windows system requirements. It's messed up...

So does this mean that if you but a game that previously listed support for 32bit Macs, once you buy it, you'll be able to download it for Mac?

If you buy a game here, you get ALL OS versions. So yes, all the Tex and other 32 bit MacOS games are still for sale.
This was discussed before several times, and no, it was not a good way to handle it on GOG's part. Steam, for example, still lists 32-bit Mac games, just with a banner saying they're not compatible with 10.15. Pretty lame that Steam can get this right but GOG can't.

Technically you can still see 32-bit Mac games, stupidly listed in the Windows system requirements. (And this particular game is a bit silly considering other DOSBox games were converted to 64-bit DOSBox.)
