It sounds a lot like [url=http://www.vgmpf.com/Wiki/index.php?title=File:05_-_Tetris_-_NES_-_Music_3.ogg]Hirokazu Tanaka[/url]'s Tetris composing, but I'm not sure. I wonder if it's from an actual song or they just made that short sample specifically for the documentary.

Most of the score is usually composed specifically for the show.
Ray Loring composed the scores for a good deal of the episodes. Not sure about episode you linked to, but maybe if you look up some of his music, you can find songs similar to it.

On their site it says MUSIC: Philip Sheppard so...

I went and heard a lot of songs, couldn't find the specific one, but then again, I need sleep so maybe you have more luck OP. :P
