Okay first I wanted to ask why contact support takes a lot of time to answer. Like a hell lot. I have been trying to reach them twice within 2 weeks or so and nothing.

"Why my game folder is 14 GB of size when in the game store page it says 5 GB?. What files I can uninstall and tell me where are they located? thanks".

Im talking about Monster Boy game. 14 GB is a lot of space for this game, which I think the pure original size is around
5 GB?
So what is the best way to uninstall the things I dont need and their location?

how did you install, via the Galaxy client, or offline installers via the website?

I installed it through GOG Galaxy. Yeah I see some folders like that, I will erase them then.

Looks like you downloaded the offline install files as well as the game

You don't need to download anything [EXTRAS] unless you want o get the offline installs or wallpaper, soundtracks, etc

Oh I did double action? Yeah maybe, its that I didnt understand quite well the launcher and how it presents things.
I erased those files, all is well thanks.

In recent years, GoG has been including all locales of the game in one installer, then when you install it according to language it will install what you need. So the installed file could be smaller than the installer.

edit: Also, the installer may include redistribution required to run. In the event it needs DX 11/12 AND .NET, that could be a VERY big chunk that isn't part of the game...
