You can't. But you can hide it.
Go to https://www.gog.com/account and hover over the game in question. When you click the arrow to the right, Hide is the last option in the list.

Why would you delete it, just don't install it
You could have a game erased from your account, but really there's no chance of that happening in current circumstances. Just hide it and deal.
As far as i know, the only way you can issue the removal of a game from your account is to ask support to do it for you. But the bot system is faulty at best, so be patient if you're really willing to go through the process.
I dont think there is any benefit to delete a game since the game in your library indicates your "ownership" of it.

Best to just hide it.
The benefit of deleting games from your account is knowing that the number of owned games matches up with what will come up on the screen. I purchased 3 games, and tried a demo for another. I didn't like the demo, so I uninstalled it. However, Galaxy still considers me an owner, so it's permanently in my list now. If I decide to try other demos, this list will continue to grow.

And that's why I won't add demos anymore to my account: I now have a reason to open Steam, so I can remove them when I want.
Go to your game library and hide it. https://www.gog.com/en/account

There's a hide option in Galaxy also but since I don't use Galaxy, I'll let someone else post how to do it.


Now I'm sure that someone is going to come along and say that just hiding it is soul destroying, ruining their life or something, but that's not the case. Hiding means that you can change your mind, go back, and give the game another go because maybe you were wrong about that game.
I have 107 games 'hidden', often ones too annoying that i don't want to bother again with them. Several have the tag 'quit/annoying' like Rayman Raving Rabbids.

These games include the drod series, lego games, demos, point and click titles, 'simulator' games, ultima games and 'freebies' that the account started with that have a difficult UI to deal with anymore or are too much a grind to be arsed to be bothered.
I only hide demos because GOG won't let me remove them. They could make them so they can be "refunded" forever.

I would hope games that are 'free' to claim including demos could have an 'abandon' button, because you can always claim it free later.
I can't imagine what GOG's disadvantage (or fear?) would be, if it could be made possible to ask from support to remove an unwanted game. People don't want a refund, nor an exchange with an other game of equal price. Just the capability to remove from the library an unwanted game, because we didn't like it and we don't want to have it litter the library with its presence. I'm talking about games bought before there was the refund option. Or is GOG afraid that if we change our minds again and we want that game back, we would demand to be given back for free? No, nothing of the like. It could be stated explicitly that if one wants that game back, then he would have to buy it again.
From my part, I regret having bought Pathologic 1. Unfortunately I bought it first and read about its strangeness and high difficulty later! I haven't tried it, I haven't even downloaded it, not even once!
Most of the demos I want to remove are for games I've bought. The rest are for games I'll probably buy.

It would be better, if demos were available to download directly, without the necessity of adding them to the library.
