GOG has added a disclaimer to the product page now but I think that it can't get mentioned often enough:

GOG is not selling the uncensored game. The publisher was offering it but GOG thought it would be wiser to sell the censored version for some obsure reason only they an their marketing team understand.
Like Shining Star Nova >.< ....
It"s a complete nonsense when you see so many titles with the tag NSFW sold there with an unrated / uncensored added as Free "DLC" download directly on each related product page.

Fine to sell the censored version, but why not adding the uncensored version as free download. It's just more obscure, it's not logical when you sell a product which has an NSFW tag. Must be the end-user choice to play the censored or not.

After some research : it seems the patch for the uncensored version must be bought ..... could be reason ?

Are you guys using random org or an AI to choose the themes / titles and the content of these promo offers ?
Crossroads Inn has more than a handful of reviews on Steam that suggest that the game has been abandoned. I'd say that the violence in this case is 100% against anyone that spends money on the game.
