So I saw in Witcher 3 there was some sort of soundtrack concert you could buy as a video.

Where or how would you view that? Would it show up in the games library in GOG galaxy? Download it somewhere?

You can download the DRM-free video.
GOG initially provide online streaming, but I am not sure if they still support this.
Download and watch locally is always supported.

They don't officially support streaming anymore, but, as a workaround, you can edit the download URL for a particular video in your library (change "downlink" to "video" in the URL) to watch it in the browser. I just tried it again, and it still works. :)
