I have been using steam mainly so I am not that familiar with release of games on GoG.

If a game page says it's being released on the 18th of October - what time are those released and available for purchase?

Steam for example usually makes the available 7pm GMT.

Would greatly appreciate some feedback on this...

I've seen a lot of activity by GOG starting around 1PM GMT. Having said that, releases sometimes get staggered throughout the day. So it all depends really.
