I mean if I uninstall the game and than install will it show how I played before uninstall? Some my games have 0 minutes even though I am pretty sure I played them more than that. Also it would be useful if I could sort my games by playtime (even after uninstall).

For the first part. time played is saved to GOG's servers (it can take a bit to update though). It has also been buggy in the past. For the most part it should work fine, and GOG recently released a patch that fixed the time not being recordered if the game had a launcher when you click play.
My first thought was, no, you will never get that time back. :P

Staff has recently stated that they have no tickets on this issue:

Best bet would be to go ahead and open up a support ticket and give details if this is still an issue for you.
