TimetravelerKi: EDIT: I'm trying to figure out how the dosbox config files work. Does anyone know a good source of information?
You mean this stuff?
Here's a link for some in-depth instructions on setting up a DosBox environment on Raspberry 4.

This one is using DosBox-X, which is a fork that adds easier to do setup process for DosBox.
Thanks guys!

I'll have something to tinker with during lockdown. I'm starting to have trouble finding new things to do :D
If using a Debian-based OS like Raspbian, you could give a try to ./play.it, an open-source software generating Linux packages from GOG (and other) installers.

In most cases, it should take care of the required tweaks to avoid sound issues and such. Vanilla DOSBox is used by the way (your system-provided DOSBox to be exact), not a fork or some tweaked edition.

The two main drawbacks are:
- it supports a set list of games, so yours might not be supported yet (feel free to request support for new games)
- it is mostly untested on ARM setups, while it should work there is no guarantee it will be without quirks
