Why exactly is the "Risen 2 Gold Edition" much more expensive (7,99 €) than "Risen 2" + "Risen 2 Gold Edition Upgrade" (1,49+2,29 = 3,68 €)?

Yes, was the same when I brought I think, or maybe the third one. Either way, you have to keep an eye out for these they do occasionally happen.
Essentially, the pub makes you pay for convenience if you don't pay attention. Dirty trick, but not uncommon.
Even better, it doesn't mark the Gold Edition as owned if you buy the original and the upgrade.
That's weird, usually it cheaper to buy GotY version that base game+DLCs separately.

I had that thing with other games here, for example I can still buy DLCs for Pillars of Eternity for myself (not as a gift) despite the fact that I bought GotY version.
Or Witcher3 and Pathfinder Kingmaker, they got that too.

This is a GOG issue in general, and one they seem to have no interest in fixing.
