Looks like it's no longer coming to GOG, Page is gone and their sight only lists steam and ps5.

Looks like the game's devs decided to went (full retard)... I mean "full online" mode.
The game's page on steam states that "Wizard with a Gun is an online cooperative sandbox survival game."
Well if it's an always-online game it sure doesn't belong on GOG. Shame, because the game looked cool.

Funny times those in which we're living... People are becoming more and more autistic, isolated and hostile concerning interacting with others. But more and more games are going the "only play with friends" way. Must be something related to "safe spaces" and never leaving home, I'd guess?

That's not actually true, according to GOG itself, as of some months ago when GOG released a server on which to play Wolfenstein: Enemy Territory, and along with that, they announced that GOG will now be offering online-only multiplayer games going forward.

And here is a GOG store page for that game, which has no singleplayer:

GWENT of course is also an online-only game with no singleplayer that has been on GOG for a long time.

Both games you mentioned are free. I don't give a shit about free online games, so GOG could easily put 100 games like that and I wouldn't care. GOG can even make a deal with valve and put "Counter-Strike" here for all I care. But SELLING an online-only (DRM'd) game, that's a different story.

So according to GOG's official policies, there are zero reasons why Wizard with a Gun couldn't still come to GOG, despite it being sold for money and online-only.

Online-only and multiplayer-only are different things. Gwent is online-only game, it requires connection to master sever. Wolf: ET requires no such thing, you can self-host your own servers, play on your friend's server, public servers or local network. Or install bots and play offline. It's perfect example of DRM-free multiplayer-only game.

In early March 2022, the game had a Coming Soon page here on GOG. It was then briefly listed for sale at $99.99 and got negative reviews as a result. Then the page vanished altogether, while on Steam it was still listed as "Coming 2022". It was finally released on Steam on October 17th 2023 to Very Positive reviews, while we didn't get even a scrap of news.

I have no idea what I missed out on here. My interest in the game died long before the studio did.
