For the programmers out there, there is actually SDK / library that help to make such demos. Search it yourself as it late night already (pouet demo tool section is a good place to start)

I loved watching bb while installed a booted livecd (linux) onto my hdd, it uses the aa lib (ascii art library). There is also a programm to turn video into ascii art on-the-fly as well as an Android app to shoot ascii pictures or video with the built in cam (think it is called AsciiCam and I installed it via f-droid but should be in the play store as well)
