I was considering uninstalling Galaxy and just downloading them normally. But I really don't know if I'm going to do that.

I think it's just, GOG Galaxy is gradually feeling more and more like Steam by the day, and I dunno... I think the fact that I need to launch Galaxy to run almost all of my games, is why I feel that way.
You don't really? Unless you're doing very specific multiplayer things like AVP2000, Stardew if you're too lazy for IP, and Gwent, I guess.

Running all my games through Galaxy never bothered me before, maybe I'm just in a weird mood.

Either way, I'm not going to uninstall it, more trouble than it's worth.

Gwent and games with galaxy-exclusive multiplayer. But mostly (except for few titles, heavily downvoted for that) games with galaxy coop feature LAN as alternative (so you can use third party services to emulate LAN over network and play with friends).

So - except for easy auto-update (which kinda can be solved by usage of gogrepo.py and similar community-driven projects), you lose nothing
The thing I hate about galaxy is that it forcibly installs shortcuts into your start menu that aren't nested in a GOG folder, and if you delete them, galaxy reinstalls those freaking shortcuts. You have no choice in the matter.

Meanwhile, Steam doesn't install useless shortcuts into your start menu.

Also, I'm pretty fed up with how GOG doesn't use any decent dosbox builds with direct3d rendering and pixel shader support, nor do they use a single doxbox version to run all installed dos games. So you're better off using a seperate GUI launcher like D-Fend to run the games.

You don't though. You can go into the game installation folder and create a shortcut from the game's .exe to your desktop. If you start it from that, Galaxy won't launch. The shortcut that gets added to your desktop if you install the game through Galaxy will launch the client, but the one you create yourself won't.
