There's nothing on any of the above, as far as I'm aware, but one may think Sony has plans beyond HZD. As to what other titles it may release here and when, it's anyone's guess.

Oh, and I wouldn't count on any Ubisoft titles any time soon...

After Skyrim, who knows what the future stores for GOG. I would particularly love to see more Assassin's Creeds arrive here.

But nothing is certain as of now.

I vaguely remember the dev stating their intent to release it on GoG once it's finished and released properly, but don't quote me on that.

As a complete edition compiling all of its current and future additional content into one package (similar to the first one's Solar Challenge Edition), maybe?

Revived MicroProse seems to be not fond of DRM-free or GoG (or both) for some reason, so unfortunately no signs.
Unless their stance changes and they (re-)start releasing here again of course, whenever that is.

If I remember correctly this actually was unofficially confirmed for release on GoG via a review, but retracted shortly after, because the reviewer wasn't supposed to make that public.
Nothing including the release on GoG since then, so I assume, for now and until further notice it's still held back by Sony as a sort of penalisation for CDPR not being able to get Cyberpunk 2077 to run on their weak playboxes.
