Does anyone know when amazon "resets" the monthly games? I'd assume first of the month but I'm looking now on the 2nd and they still seem to be offering November's games. I'm thinking december might be a good month to try out a free month of prime.

Depends on the game. They each have their own expiration dates so you'll have to check their respective pages. A lot seem to come with a 2-3 month availability window.

Fuguss: Amazon prime gives away occasional GoG games. But for some reason they don't make the game as owned in the actual site.

You will see the game in your collection, you can download it and play it without issue but when you go to look at games to see what is on sale, it doesn't mark it as you owning it and you can't filter them out as owned games which sometimes has you staring at a game on sale with you swearing to yourself that you thought you already owned that game.

Anyone know why GoG has it setup like that and any chance of them addressing it so claiming a game from amazon still marks you as claiming that game?

Braggadar: True, from a certain point of view. The Prime games are normally base games, not complete nor deluxe versions with all available optional DLCs and artbooks etc added. But these aren't unique Prime "versions", it's just they're offering the cheapest edition of the game found on the GOG platform.
There's a problem with this, though. Some of the GOG extras aren't really extras. For instance, manuals and other reference materials that came with the game. Not only are these not available for purchase separately, but they shouldn't need an additional purchase anyway, yet as "Extras" they don't get included in the Amazon Prime versions.

As for optional DLCs, do the Amazon Prime versions allow you to buy the DLCs for them, or do you have to get the GOG base game and get the DLCs for that instead?

Yes, I bought DLCs for multiple of those no problem.

Amazon Prime includes games for various platforms (GOG, Epic Games, Amazon Games, Legacy Games).
You get a key for every GOG game you claim there, but these are the exact same versions that are available here on GOG's web store. There are no extras omitted or anything. *IF* a product on GOG includes extras, you'll also get them via redeeming Amazon Prime codes. The truth is, that many modern games simply don't have any complimentary extras (manuals, reference cards) included anymore (unlike the old "classics").

Again, there are no distinct "Prime versions" ** of games. If you are looking for DLC content, you don't need to buy another "GOG base game" because they are the exact same. If DLCs are available, great! If not, then it's not a limitation by Amazon.

** Technically, there is a small difference. Amazon Prime giveaways are implemented as special "bundles" in GOG's database. But that difference shows only in the very first step (when you redeem your key). --- Basically, it works like this: Prime gives you games in a fancy gift wrap with Amazon logo on it. Once you open your present (= redeem the key), out comes a plain old GOG product which gets added to your GOG library the same way as if bought directly here in the store.

Well, I just got 31 games in the last couple of days and not one had any extras listed at all, which is surprising. I'd have expected to have seen a manual in at least one of these. The 31 are listed below, so if anyone has them via GOG rather than Prime and can see if they have any extras, then we could confirm this.

We don't have to check this, seriously. If you want evidence have a play around on GOGdb and see how the Prime games are done, and whether or not the game normally comes with manuals as extras. Prime codes aren't distinct versions, they are simple packages in the database back-end to specially mark / differentiate in your orders where they came from.

Those games don't have extras, because the GOG game available from GOG's store doesn't have them. GOG's catalogue has been sparse for years when it comes to freebie manuals etc (and a lot of those games you list are newer than paper or CD extras, so you'd expect if they DID have them they'd be DLCs sold separately).

Kerbal Space Program
It is quite the norm for relatively-new games not to include 'extras'. In my experience, GOG does not maintain separate library entries for games obtained through Amazon Prime Gaming. This is the case even if the product identifiers are different (which often leads to said games not being marked as [Owned]).

Here is one point of data:
I had purchased Kerbal Space Program on 2019-06-28. No additional files to be found.
