From my experience working in book publishing, different translations are prone to their own copyrights, so studios/publishers cannot always access them if they can't secure the rights to them. My guess is that Double Fine only got the rights to work with the English version of the game, and not the other languages it was originally released with. Then again, I could be wrong, and so could GOG's game page -- maybe they'll release the game with other language support.

Based on previous releases you will be wrong. I haven't seen official word about it though.
