I'm at the mission where you have to destroy the four forward cannons on the enemy battleship and can't seem to destroy more than one. Is there a specific angle of approach I should take? I'm hammering it with both kinds of missiles, but sometimes even the first cannon won't blow up. What do I do?

What is the name of this mission?
If it's the one I'm thinking of, you should be piloting a heavy bomber, armed with GTM Tsunami bombs. It should only take 2-3 bombs to destroy any given cannon, provided that you hit the cannon directly, and you can reload in the middle of the mission if you need to. You're fighting a Shivan superdestroyer, right? The cannons should be on the very tips of those claw-like things at the bow of the ship; as such, you need to aim for said tips if you want to ensure that you deal real damage.

Bombs don't track well, and the spot you have to hit is pretty small (the very tip of each "claw.") I find it's easiest to hit when parked close to the claw, looking along its length towards the tip.
Set your torpedos to double fire mode and get in fairly close so that the flak batteries don't shoot them down. There's also a bit of a bug whereby if the targetting box turns to a diamond, indicating that the target is obscured, the bombs won't damage the target, even if they hit it.
You only need to to take out two of the guns to progress. Any you don't take down will be left for the next mission.

I spent so many hours trying to get a "perfect" run of that mission. The sheer number of keys I would press whenever I restarted it... Link bombs, all power to thrusters, tell wingmen to engage, maximize acceleration and afterburners, call for backup, call for ammo before I'd even fired a shot... And then it turned out that the mission was linked with the next one. If you failed to take out anything in the first mission you would get another shot at it in the next, assuming it didn't take out the other ship you were supposed to be protecting first. I didn't actually have anything to do on that mission, so I just watched the battle and took out some of the anti-fighter beam turrets, or whatever they're called.
Do a barrel roll!

clockwise or counter-clockwise?

But more seriously,

MISSION 30 - BEARBAITING

Loadout - You need to set your ship loadout to Helios missiles.

Mission start: Call in for rearming (this will make rearming faster once you use your missiles). Set your missiles to dual fire mode. Call in reinforcements, they will help out with the fighters so you can concentrate on the beam weapons.

Target the Beam Turrets and fly in close; as was previously mentioned in the thread, you should only fire the missiles from close range. Two Helios missiles (if they hit their mark) will take out one beam weapon. Target the second.... then rearm yourself. While you are rearming, why not target a few flak cannons.

Repeat the above procedures until all beam weapons are out, or the ship jumps out.

If that doesn't work, follow Whitecroc's advise:

Good luck!

desic: Loadout - You need to set your ship loadout to Helios missiles.
Well, you have a predefined loadout, which you cannot alter.

And they're torpedoes.

My mistake. The Helios are labelled as Torpedoes on the HUD.
