You can do what people did in the oldern days: Draw a map on squared paper. Or you could take a look at the maps in the clue book. Or you could try to explore the dungeon by going always right or going always left. After a while you will familiarize yourself with your surroundings.

Don't forget: There are buttons top be pressed, that open passages, illusionary walls that can be walked through. There's also a bunch of food lying around in the game and once your cleric is able to cast level three spells, he can create food all by himself.
