I'm using an older version of MacOS, so although I can't help you specifically I can hopefully help you with a more general suggestion.

GOG's DOS game packages come with a version of DOSBox included, this version of DOSBox is probably incompatible with MacOS 15.2.

I have found in the past with GOG's DOS games that it's best to download a full/current standalone version of DOSBox, then find the game files from inside the GOG game package (by right-clicking on the app and selecting 'show package contents', you may have to go a couple of levels deep here to find the correct files), and then run the game files with the new/downloaded DOSBox.

You probably have to edit the DOSBox configuration file that's within the Pool of Radiance game directory specifically. I kept getting a whitescreen and found this fix in another thread (credit to Haronniin):

1) Open Finder and go to Applications.
2) Right click on Pool of Radiance and select Show Package Contents.
3) Navigate down to /Contents/Resources/game
4) Right click on the dosbox_por.conf file and select Open With > TextEdit.
5) Under the [sdl] section I had to change two settings to get the game to work. Here are my edits:
fullresolution=original
output=opengl
6) Save the file and launch the game

This worked for me.

And even this was not enough for (but helpful too). One might try to disable Stage Manager too, I noticed it often clashes with fullscreen apps and DOSBox is most likely starting in fullscreen if config hasn't been changed
