I'm playing the game with the Roland MT-32 music, and I can't seem to get it loud enough to be enjoyable.

Can't help you with MUNT, but I generally have had positive experiences using the BASSMIDI Driver.

Is there anyway to configure GOG games with a real Roland MT32? I'm using a MAC and with dosbox and SCUMMVM you can use the coreaudio option to pass the data to the real roland MT32.
