For whatever its worth I'm making an attempt to update to one of the unofficial patches on the Mac version of FO:2. Using Killap's Fallout 1.02+ (1.02.27.1) patch found at No Mutants Allowed (and using a random .rar file extractor found in the apps store) I found the instructions to be pretty close, but not exactly, correct for the install.

When you open the readme.txt it gives you an incorrect location to place the patch000.dat file. Instead of Contents/Resources/GameData (which does not exist for the current version) I went to Contents/Resources/Drive_C/Program Files/GOG.com/Fallout 2 and replaced the file there.

While I understand that this is not the most 'up to date' patch for FO:2 I'm still expecting it to be significantly better then what I remember playing approx. 15 years ago. I don't know exactly what is or isn't compatible with the Mac version so I wanted to stick to something which explicitly states its compatibility.

If you all don't hear back from me in the next hour or so it should be safe to assume that this is a working method and I'm enjoying the game. Wish me luck!

Well fwiw she works flawlessly. No compatibility errors, no coloring issues, no further tweaking needed at all. All it took was installing the game, installing X11 (I needed to get around to it eventually anyway, though I don't know if it was explicitly needed for the game) and dropping the new patch000 file into the right spot and it's gtg.

I just confirmed that the method provided by Taluric works perfectly. I even checked the rock for the patch notes and they came up. No issues so far with FO2 working on my Mac (OSx 10.8)
From what I understand the Mac Fallout 2 from GOG came with the patch000.dat file however that patch file is outdated and/or no longer works so if you just download it again (found on killap's web page) and stick the file in the "Fallout 2" folder then you should see the rock outside of the Temple of Trials when you boot up the game saying that you're running killap's unofficial Fallout 2 patch (version 1.02.27.1) English version. It worked for me that way at least.

Also, you must start a new game after placing the patch000.dat file in the directory folder in order for it to properly work. Happy Fallout everyone!
