I'm mainly looking for quality of life ones that won't break gog achievements, if there's anything else you may feel that makes the game interesting please share that too!
Recently I tried "Tale of Two Wastelands" but gave up on it as overmodded and went back to primarily vanilla game with bug fixes with a few Quality of Life updates.

But I still looked to their guide for some essentials:

I'm using Vortex as my mod manager, and these are the Mods I have installed:

Highlights:

YUP: This is the major bugfix patch. Must have.

Realistic Wasteland lighting: Makes much more beautiful lighting and skies and has negligible overhead.

JIP improved recipe menu: If you are going to hand load bullets or convert energy Ammo, you need this. Lets you process all at once instead of small batches.

Stewie Tweaks: This can change a LOT. Too much really. I only use it to fix game controller aiming and lower the deadzone.

I have no idea what affect achievements, as I don't care about them and don't use Galaxy.
Just about all the more major mods are going to require NVSE (New Vegas Script Extender) to operate and you won't get your GOG Galaxy achievements unless you point Galaxy to launch the NVSE launcher and then test it with an early game achievement.

The 4GB Patcher mod does say it makes New Vegas automatically load NVSE so that might be an even easier fix for this but I'd have no idea. The 4GB issue isn't needed for the GOG version of New Vegas but that functionality with auto loading NVSE isn't included so I guess try that out and see if it still registers your achievements.

Either way, I'd get the mods you'd want first and then test to see if the achievements still register afterwards before committing to a long playthrough. It might not instantly award the achievement either so have a little patience and give it a few minutes too. Or, if you don't care about the achievements or just get them all without (many) mods, you can mod without worrying about it.
