Probably pretty simple for those who are more computer literate, but when I open FO1 I get a message saying "error initializing video mode 640x480"

I understand that is the pixel number(?) but what I don't understand is what I can do haha.

Intriguing. I've little idea what I'm doing, so if anybody knows what's going on, please jump in and shut me up.

To start with, though, are you running the GOG version? I assume so, but it's worth asking.
What OS and version are you using?
What's the minimum resolution of your card? What card is it, for that matter?
Have you applied any mods? I doubt it, but it's worth asking.
