So what happens to those of us who bought the games on gog.com now, is gog going to remove the games we paid for or are they going to take the games down so no one else can buy em.
as a result, I just bought more interplay titles from gog.com just to make me feel like I slapped bethesda across the face

First, nothing has happened yet. Second, IF Bethesda wins and IF they can prohibit further sales of Fallout titles, you probably will have the opportunity to download your already bought Fallout games, but further sales of these titles will not be possible. IF Bethesda wins and IF they want to stopp further sales, of course :)
And then, one will get the old Fallout titles the traditional way ... downloading the "Fallout Collection" from some torrent swarm. But Bethesda will not stop sales, they just want money like everyone else ...

Most likely, the worst that'll happen is a temporary suspension of sales as Bethesda and GOG, followed by new rights notices on those sales pages.
Either way, get 'em while you can.
i just bought my copies! kinda wish i had, had money when that interplay sale was going on or i would have bought them ( and some more shit ) earlier.
DAMN THE MAN, FUCK BETHSHITTIA!
on a side note i almost waited to buy copies as i didn't want to see my money stolen by the rat bastards mentioned above ( should they win there BS lawsuit ) but decided that the risk was worth it to support interplay.
DAMN YOU BETHESDA!!

According to gamespot they're not demanding any money.
They're sueing over the rights to the name Fallout and the Fallout universe.
From what I've read on a Dutch news site, Bethesda filed papers at the court claiming Interplay wouldn't be able to pay any monetary damage anyway.
Bethesda is very much a customers-first kind of company. They listen to their customers and actually care what they have to say. I doubt very much that they would do anything to actively screw the gamers.

While I would have said that about Bethesda a while back they are starting to look like they are trying to emulate Activision-Blizzard now which isn't a good thing.

Bullshit. Just look at their forums and you'll see how untrue that is - Bethesda only listens to you if you laud them, and then only if they think they can con some more money out of you. As for the Interplay Vs. Bethesda situation, if GoG stops selling the game then I would say torrent the hell out of them as you would no longer be hurting this site.
At first, I wondered why the thread on the same topic with the same title in the General Discussion forum was insufficient...

Oy.
Crap like this has already happened to GoG. Operation Flashpoint used to be sold, it isn't anymore. But I can still download OFP from GoG, and still play that version.
So, worst case scenario, the same thing will happen with this. GoG will honor their previous sales.

It depends on how the licenses are arranged. Look at TOCA3 and CMR2005. They are no longer sold and files to be removed from the servers, and once done, no more downloading of those two games.
However, I'm guessing this will be a different type of issue.
Well, these are the risks you take when you try to offer consumers older digital products that have switched owners (read IP holders) or run the risk of having their franchise picked up by another company. The issue isn't so much with GOG in general but with the entire digital distribution model, once the product is gone from their servers it is no longer your product as well. It sucks for those that deleted the installation file or lost it due to hardware failure but it is the only fair way to comply with IP laws.
The main people at fault is really both companies that own/owned the franchise. Interplay continued to sell the Fallout series despite selling the rights to the series to Bethesda and thereby breached their contract and current IP law. Bethesda is currently just trying to hold onto the legal rights to the franchise they legally bought from Interplay. While I disagree with Bethesda's actions on the matter, it is well within their legal right to do so. It sucks that us innocent consumers may end up getting the shaft but at this point their is nothing we really can do.
Damn Bethesda. Didn't they earn enough cash on FO3 & DLC's so now they wan't everything.
