If I buy this game under my Australian profile, I'm still getting the uncensored version right? We still don't have an R18 classification here so I just need to know whether or not I need to fiddle with my region settings before I buy it. Thanks.

As far as I know, everyone gets the same version. There has been some IP geolocalization stuff with The Witcher 2 (due to Namco Bandai I think) but for all the other games, everyone gets the same.

Yes, you will get the uncensored product, your laws forbid the sale in locally registered companies ( including digital ) to sell you the products. GoG how ever is a international service and should be exempt from this.
