Which one, 0.15.23? (The latest when I'm posting this)
GOG doesn't get every experimental build as they come out to close together to make patches viable. However, major experimental builds do come every now and then (0.15.18 being the most recent).
Remember that by making an account on factorio.com, you can update to the latest experimental build in-game by enabling auto-updates. Then, when the game finds a new update (say 0.15.23), it will ask you if you want to update to that version - allowing you to get the latest version without having to wait for GOG.

since posting this... the builds have been updating every time a new experimentional build is available.

GOG has a short delay to stamp their seal on each thing they upload to their server.
