Decided to gather these up from some other posts here (thanks to this thread and this post).
Startup related
Concept.cfg is generally found here:
[C:\GOG Games\]Evil Genius\DynamicResources\Config
[ ]=May vary according to where you installed the game.
Skip the intro movie (thanks to Ralackk for the info in their post).
Edit the concept.cfg file, changing StartupState from 0 to 1.
Skip the copyright screen (thanks again to Ralackk for their post).
Edit the concept.cfg file, changing CopyrightScreenDuration=10 to 0.
(This refers to the screen after the intro and load, immediately before you're at the main menu.)
In-game related
In the [GameCamera] section change the following line:
MaxHeight=50.0
to 80.0 or higher. This will allow you to zoom out further which can be handy when managing a large base or figuring the best location for a hotel. (Courtesy of AstralWanderer.)
Additional notes for this:
If the game becomes sluggish from increasing the height, you may want to reduce it to restore performance. This insight's courtesy of Squid830.

Enabling debug console:
In your Evil Genius install folder, go to the folder DynamicResources\Config and open the file Default.ksb with a text editing program like Notepad.
Add the following line at the end (before the final hyphens in the file):
ToggleDebugCommands:Ctrl+D
Add the same line to the file Current.ksb (if it exists).
Restart Evil Genius (if running) and press Ctrl+D (make sure numlock is off if it doesn't work the first time), then press the `~ key (that is the key typically just to the left of the 1 key and above the Tab key on english keyboards).

"Fast forwarding" the game:
Type the following command into the debug console that appears after following the above instructions proceeded by the speed setting you wish to change the game to.
Speed - changes game speed (0 or less than 0 = pause, 1 = normal, 2 = double, 3 = triple, etc.).
See here for more commands to experiment with.
Additional notes:
If you haven't played the game before, you may want to try playing it with the default game speed for awhile first before speeding it up, as this may make the game more difficult and frustrating than originally intended. However, if you feel up to the task, feel free to go after it. There may, however, be stability problems or other bugs that arise from this since the game was probably not developed with faster speeds in mind.

Anywho, I know much of this is already easily found in the other thread I linked, but I thought having them in a more abbreviated form for others might be found helpful/useful. I know I was especially happy to find the camera adjustment tweaks and debug menu stuff to possibly play the game with improved views and speeds. As fun as Evil Genius is with its existing pace, given its style and other game relatives, it seems somewhat bizarre to jump into it without the options to adjust that.
And you know, with so few games letting you blend people, I think it'd be a pity to let that turn people away. =)
