Wanting to restart the tutorial and see what i missed but I need to delete my old game first.

Hi grounddown77,
for your usecase I would recommend to reset the game via the main menu (Options -> Game -> Reset Game).
If you would like to backup or clear your savegames manually you will find them for the GOG version located at:
~/.config/Epic/RSG/Saved/SaveGames
