When you beat Book 1 can you transfer your character to Book 2? Or do you start anew?

You start a new. I like to make fighters so I always make up cool stories for each fighter I play. When I finish the game, I always think which character would win in a duel between my chars. Because the combat system is a bit random, you can do that. The 3rd game will allow you to make mods.
