Will the linux version ever be released on GOG?
Is it possible that Linux is forgotten?

Personally, I am quite pessimistic about the fact that this is useful.
Gog makes his life, and looks at the votes only to put "finish".
But if developers see it, it can help to make a decision.
Sorry to be a little off-topic - as I am not engaged with Escapist 2 right now - but from my experience there are a lot of games not available on GOG under Linux while Steam has a Linux version (of cause ;).
Even if GOG has the Linux version the Demo may have no Linux version (e.g. The Pedestrian) even though it is on itch.io (maybe not up-to-date - but playable).
I am tired creating tickets which are not worked on but ending like "we were not provided by a Linux version by the publisher" and the like. I would have hoped that GOG demands a Demo for a game it has in Store ... but I am not aware of GOG's weight to be fair here.

So I try getting into contact with developers myself and even offer help in testing etc. - but don't expect much. But it's the most constructive I see right now.

GOG seems to vastly underestimate the bad effect when customers just see GOG as a purchasing platform just looking for cheap buying ... and not about quality (DRM free, trustworthy, ...).
I was told to create tickets as that's the way GOG can improve ... but users want to see advancements ... which I see only seldomly.
Even changes to the product page (working controller while GOG says nothing about controller support etc.) is ignored ... I will provide those information when writing a review ... but other things got higher priority right now.

Similar to Linux is the problem with 32 bit - macOS is the first to have ended support - maybe Linux will be next starting with Ubuntu 22.04 ... we will see. So those games won't work with future hardware.

Furthermore there are several games which have no Windows version or no 64 bit version but can be used with an Open Source Engine (OSE) - like Aquaria or ID titles. They could be packaged for Linux - I installed them on my system ... and offered help ...
Maybe the Publisher may make problems ... but GOG was not interested at all ...
[And I am not happy to get insulted to have bought Windows games - just the official license/content to use the Linux OSE ... a really big difference! :]

And wording of "support" (and its flavours) is really interesting - you have support for the (Ubuntu LTS {Long Term Stability} and thus with luck Mint) versions mentioned on the product page - the STS are `supported' as they hope it will work ... thus problems with 19.10 (Eoan) had been ignored and are now a problem for the current Ubuntu 20.04 LTS (Focal) - which is officially not in support by GOG - which has to change in near future.
I started getting into contact with developers here ... and provide workarounds for what I find in forum posts.
But yes - I would wish that GOG sees this as their task.

Same for providing updates and asking for missing ones for special platforms (not so seldomly it is Linux which is missing ...) and provide clear info if developers stop working on one or even two of just three supported platforms here.
Currently, not even the latest version is given for all `supported' platforms on the product page ... not to mention that reviews don't mention the used version or platform and old (thus no longer valid after mostly many fixes) reviews just disturb gamers looking for the current state - and that reviews can not be edited but only deleted by ticket is not helpful here (at least the forum post body can be edited, not the title ...).

But maybe GOG will change several points in future ... the support knows about those problems, so I don't see any reason for such tickets any more - just for clear cases with full supported versions ... but as said: there is always hope ;)

At least concerning `The Escapist' (1) Linux seems to be supported on same level ... (I use Linux - no Windows, no macOS - so I can not tell for sure ;).

So thank you for that very, very, long explanation, I read it twice and...
I am to accore with what you say.

I contacted a few developers, faced with the inaction of gog.
For the 32-Bit, I wasn’t really worried, before I read you.
Aquaria packaging or other 32Bit its interested me, to understand.
Perhaps we could create a post to talk about it?
Or in private, if you want.
