since the cabin only works when there are animals in the work zone and the animals seem to randomly go about without a real patern or preferenece, the cabin is not getting any food most of the time.

i know it overlaps a lot with the gatherers, but could the hunter (abstractly, that is) get a random amount of small animals from the work zones? with the large animals like boars and deer being the BIG profit/pay off?

Just to clarify this, by cabin you mean the Hunter's Lodge? Animals do roam quite random, which give the player a certain challenge to gather food from that.
Your idea with smaller animals is quite good, however this cannot be added that easy and fast, which means you will be limited still from where the animals settle.

But again, great idea! We will think about that :)

oh yes, the hunter lodge, the name escaped me for a minute
It could be a passive "income" for the lodge. It doesn't need animations, just have additional meat added to the storage over time.

Having no animations and generating something would be contrary to every other building just producing someting effectively and not just simulated. However this might still be a good concideration.
