I'll quote the message I posted in another thread recently about this, it applies similarly:
You can just purchase the GOG version, then copy the German language pack files to the GOG version (making sure you back up the originals!). It should work normally, but it might require a new German language pack in case there's any changes (from my observations in installing the Widescreen patch, there isn't)

The German language pack files would be on the German CD copy of the game. You'd need to likely purchase a German CD copy to get them. :)
If you already have a German copy, you can just copy/paste the language files over from that version to the GOG version (making sure to back up the GOG copies!) and it should work just fine.
