So far I am experimenting with adding in MODs manualy. I am happy to say I have success following your folks suggestions I read. BUT!! I know the MODs work only due to seeing an effect or affect in the game confirming no issues. Such as being able to cast a spell, etc.

What can I go look at, or how can I confirm that the Unofficial Patch is working in game for me... After being installed via manual means? For example is the a perticular gap in a building or a tree (often seen in everquest :-) ) That was fixed that confirms the patch is functioning?

Grab a pickaxe and try to sharpen it on a grindstone.
If it shows on the list, the patch is working.
