I'm a terrible action gamer, and I find combat controls in Redguard is utterly harsh to me. I don't know if it's fine for others, but it was just too difficult. However, I did find ways to cheese combat; thought I'd share it.
The very first battle in this game is right at the start. 2 pirates and you. This one was HARD. I only had 40 or so health after this combat despite the pirates' nerfed stats. But look at me, after finally having beaten the game, I now proudly can beat 6 gold guards vs me with breeze. No potions, no hit, only the lousy performance was what troubled me most.
So... CHEESE FOR EVERYONE!

Works on Trolls and sometimes Dwarven Spheres.
Trolls have problem hitting a very close opponent. Step toward the troll and keep slashing. You can kill trolls very easily this way. You can't defend their attacks so you have to get close and slash anyway. Just get extra close.
Dwarven Spheres are formidable enemies, they defend too well and you're almost hopeless against them in a fair combat. Fortunately this trick sometimes works on them too, but unlike trolls they may maneuver and get away.

Works on some Goblins, Dwarven Spheres, and sometimes humanoids.
This one is evil... and very simple too. Just attack while you're in the air. Some enemies have problem attacking target on a higher position... especially Dwarven Spheres. When it chops with the kitchen knife, parry it once and start jumping.

If all hope is lost and you can't seem to outsmaneuver your enemy whatsoever, it is also a good idea to just gulp a potion of strength and ironskin and go hacking them. The H key shortcut will restore your lost Health without playing the drinking animation. Cyrus is basically very tough so you still have an edge. You can safely spend all your coins on potions, except at the very early game when you're not yet swimming in money.

Works on most enemies. Works regardless of the number of enemies. If you master this one, the legion guards will seem like a coinpurse to you.
Assuming you're standing toe-to-toe with an opponent, steer slightly left (so that you would look at ↖ direction) and step ↗ direction. Now constantly draw a small circle around the enemy. Once your enemy attempts an attack, you'll probably on his side or back, it's time to do an attack of opportunity. Lunge if you have time to steer properly, or just slash if you're close to him.
You must keep moving. Don't stop. They'll hardly ever hit you while you're moving! Don't bother parrying. Apparently even the slashing attack has very narrow hit range.... just like lunge.
Actually you can do the same with sidestepping if you have mad controlz. But this requires you to constantly concentrate on parrying, and keeping moderate distance is difficult (maintaining focus after sidestep requires certain distance), thusly not an easy feat. But if you can do this, I wouldn't call it a cheese. It's a deserved win then. I can't do this consistently.
