If I buy the full Anniversary Edition, is there an option to install JUST Skyrim Special Edition, and NOT the Anniversary DLC? I prefer to have both options... may add the Anniversary DLC later.

If the answer is No, it comes as one giant Anniversary package, I'll probably buy and download just Skyrim SE, then later buy the Anniversary DLC and download it separately. That just costs more and is more complicated...

SCPM: Yes, Anniversary content is functionally like any other DLC that you can disable through Galaxy. You get separate installers for the game itself and the Anniversary content as well. :)
