I'm usually a fan of Bioware style RPGs. I've tried Morrowind but I didn't like it. I just couldn't see what's fun about it. (not saying Bethesda games suck; they probably don't. I just couldn't get into it.) Then my friends went crazy over Fallout 4 when that came out. I tried Fallout 3 (because my machine is too terrible to play new games). Still didn't like it. Then New Vegas. I kind of prefer it to FO3 but still not enough to finish it. then recently Oblivion.

It's like: well, Bethesda games are very successful so maybe I didn't go into it with the right expectations → tried another Bethesda game → no, still don't like it → uninstall → wait for a few years → maybe I should I give them another chance → infinite loop

Should I just give up?

The answer is probably yes. You might try to figure out why you like Baldur's Gate, but not Morrowind or Fallout. That a game is successful, has a large fan base, doesn't mean YOU like it.
For me, Morrowind / Oblivion / Daggerfall are among my all-time-favourites, while I find Baldur's Gate interesting and nice (and I have spent many hours playing the two BG games, too), but simply can't develop the same feeling of immersion into the game world, and the character development system appeals less to me than the usage-based TES system (more natural for me). With that said, I do like Temple of Elemental Evil, which is much closer to BG than to TES.
I'd say play what you like, and disregard the rest - but it's never wrong to try out something new and different, to avoid boredom.
