I've heard that there are two versions of Arena, the floppy disk version (which is the port in Anthology) and the CD version that has audio. Which version of Arena is bundled with Redguard?

It's the CD version (1.07). Arena is freeware, and you don't have to pay for Redguard (or another Bethesda product) to get it. For example, you can download 1.07 as "ArenaSetup", too (search the internet), and ready to be launched via DOSBox (just like the one you get via GOG).
