In the Campaign Game, I can see a portrait of my Astral Master and a Difficulty Level. However, the portrait is always the same (fiery-looking celestial dude) and the difficulty Level is listed as "Beginner".

This does not match the picture or the Difficulty Level that I have set in the "Player Info" screen I get if I click on my active Astral Master's name from the very first screen that pops up when Genesis opens. Which screen is right? Or am I doing something wrong in the Campaign screen to not get things to update properly?

(My name displays correctly. I've just completed the tutorial, but I had this problem in my first Campaign, too, which ended abruptly when a Barbarian Master decided he wanted my Home Shard...)

Everything is OK. This is connected with the plot of campaign-during creation of your character, there are many portraits of the leaders(and Zarr of course :)), which you''ll meet during the campaing. And thats why there is always the same portrait during the campaing. Your portrait will be seen "normally" during single scenarios (single- and multiplayer).
You can change the difficulty in the campaign somewhere, I think on the astral plane in the exit menu. (not sure right now)
Keep in mind that changing the difficulty after you start a game will only change the gameplay - but for purposes of your profile it keeps your original choice, presumably so you don't do everything on beginner and then swap to something harder at the last moment.

So your difficulty will change, it will just rub your nose in the fact that you started on beginner on your statistics screen.

Yeah, I've received that notice that says changing the difficulty later won't change the "scoring" (whatever that means), but in the individual scenarios, even playing at the "Skilled" level (judging by my display), I'm only getting 25% of the Glory.

And the AI opponent that I was playing (a local lord) definitely was listed as "Beginner" in the diplomacy screen.

Is that the way it's supposed to be? My recollection from my first campaign was that you got 25% of the Glory at "Beginner" and 50% at "Skilled", but I could be wrong there. (I'm also not sure what Glory does, but I figure I ought to search the forums for that before I complain any more. :-) )

Thats normal in the beginning of the campaign. Even if you start with the "overlord" difficulty, your first opponent will only be skilled. And I think the skill of the opponents influences the difficulty score % modifier, I have seen all kinds of numbers there while playing Expert.
Glory can be used to earn extra astral energy later. Dont decline the first offer, or it will never be offered again and have no other use.

Great context. Thanks!
