Okay, if I got this right, you're using the wrong folders. What you're referring to are the folders in the start menu (usually GOG.com\Dungeon Keeper 2\Documents) but you have to use the folder where the game is installed on your hard disk.
- Open the Windows Explorer (press Windows Key + E)
- Now go to "Computer" and select your hard disk "C:"
- Look for a folder called GOG.com and inside you should find Dungeon Keeper 2 and inside again the "Data" folder with its sub-folders (the standard installation folder is C:\GOG.com\Dungeon Keeper 2\)
Put your map files into C:\GOG.com\Dungeon Keeper 2\Data\editor\maps
As you can change the standard installation folder it might be somewhere else, but that's easy to check.
Go to the "Documents" folder you mentioned, right-click the Manual and select Properties.
The little window will show you where the file is saved (usually "C:\GOG.com\Dungeon Keeper 2\manual.pdf"). That's your game's directory.
