Wife and I have been trying to play the game together with my laptop mirrored onto the TV, but all the text and UI is incredibly tiny. Struggling to read from the couch. I don't remember text being this small when I played on 360 back in the day, any fix?

The UI doesn't scale to resolution, so playing at a high resolution means your minimap, character portraits and skill bar will be tiny. There's a mod somewhere on Nexus to make some UI elements larger (FtG UI mod), but I don't think this applies to subtitles. It's mainly for the inventory screen and codex text.

I personally lowered my resolution to 1920x1080, but judging by your screenshot, that's already where you're at. You could lower it further, if you don't mind the quality drop.

You can download and install Nathanael's 4K Resolution Mod from the nexus. It's mod that scales the UI to 2k/4k. Download the appropriate file and you should be good to go.
Nathanael's 4K Resolution this is an old solution and does not work perfectly, try to download DAFix
