Probably not, as the new update merely just adds the unity ports and also contains updates for the unity ports.
the new unity update is hard linked to beth.net so unless that is disabled I dont see it coming to GOG.com.

That's misinformation. The unity ports are not hardlinked to beth.net. The login thing is exclusively done for redeeming content for Doom Eternal and in fact it's actually DRM free and can run withouth the beth launcher, steam or internet connection.

I think it probably won't get released in GOG just because Doom Eternal isn't avaliable in GOG hence theres no need for GOG users to redeem anything. Meanwhile steam Doom Eternal users until now were on disadvantage as they wern't granted the additional content unless thay had purchased the beth.net launcher version or the console versions.

Hnmmm I was not aware of that, thank you for clearing that up, but yea I do not see the unity ports coming here either since yeah doom eternal isnt here and probably wont be for a few years.
It's nice to see them walking back on releasing the updates to stores other than Bethesda.net, regardless of whether GOG gets them or not.
What am I missing? These are supposed to be new patches for Doom (original 1993 or more specifically The Ultimate Doom) ) and Doom II. What does Doom Eternal have to do with it? That's something entirely different. Why are the patches available for a bunch of consoles and for PC on Steam, but not for those who purchased The Ultimate Doom and Doom II on GOG? Were those purchases not legitimate licenses bought and paid for? I'm failing to see why we should be left out.

Heck I still have the original WADs for Doom and Doom II from when they first came out, as I bought them back then and carried them forward from the original floppies all these years. But I bought them again on GOG anyway to support them.. Now I am being hung out to dry for new "free" updates.

In the end I suppose it doesn't matter much as there is most of it if not all of it is available on GZDoom and other ports and add-ons. But it would be nice to experiment with these new official add-ons. Like everyone else gets to do....

If you want to be in the club, I guess you have to buy Ultimate Doom and Doom II again for $4.99 each from Bethesda. OR, from Steam. Which I prefer to avoid whenever possible.

Not quite.
You can not do local network multiplayer with that port at all. And only networked multiplayer allowed is online via beth.net account.
Also this port does not allow usage of the arbitrary custom WADs. Only the limited "curated" selection is available via (surprise!) in-game beth.net logon only. That selection includes in the first place TNT, Plutiona, NRFTL and Sigil.

And they are. Steam users got Unity re-release of Ultimate DOOM and DOOM II which just installs along with the previous DOSBox version. You can choose which one to use. Even WAD files of the original DOS versions remain unchamged (at least for now) despite censored re-release.
Technically these are console version of DOOM and DOOM II, introduced in the console DOOM3 BFG, which had been back-ported to PC. And they even less cut-down than pure console counterparts.
The only relation to DOOM Eternal is Bethesda.net accout.

Be thankful we have the originals, the unity update has these ugly green crosses replacing the red ones in the dos version, personally you are better off with GZDoom, the GOG versions are still legitimate,

I wish the update would come since GOG is the only place they did not receive the update

(Update) the new versions use Unity but they are DRM free on Steam
