Whenever I start the game through Gog Galaxy, it immediately drops to desktop and a small window pops up with a bunch of text. There's flashing text at the top that reads "Failed to create XAudio2 engine. Try installing latest DirectX."
I'm running Win10.

I would suggest going to:
GOG Galaxy\Dependencies\__redist\DirectX

And running DXSetup.exe to reinstall the required version of DirectX. You may also need this update:
https://www.microsoft.com/en-us/download/details.aspx?id=8109

Make sure your antivirus of choice is not blocking the installation. It may be a good idea to make an exception for the Galaxy folder itself.

Yes, Bitdefender has a new feature protects certain folders, the desktop among them, and I think it stopped the installation of a file somewhere. I turned it off and reinstalled it and it started up. Thank you!
