I known that Doom 1 and 2 are censored in the BFG edition, but are the Ultimate DOOM and The DOOM II + Final DOOM are censored too ?

Unless GOG changed them recently, they should be as they were in the 90's (red cross & all)

A thing worth noting is that if you put the special BFG edition only NERVE.WAD through Wadsmoosh, it becomes completely uncensored.

NERVE.WAD is a PWAD, not an IWAD. The censored assets (such as the medkit sprite changing, removal of Nazi references, etc.) are within the DOOM and DOOM 2 IWADs, not within NERVE.WAD. As such, you can just use the BFG Edition's NERVE.WAD and use it with the non-BFG Edition DOOM 2 IWAD and it will be uncensored.

Political mess? Never heard of anything of the such, I'm afraid. I just use Google and check out the various Doom Wiki pages of whichever ones show up in the results. I knew there was more than one site but I've no idea of why or of any issues between them.
