Hi. I'm playing through Doom 2 at the moment with Brutal Doom for the first time in gzdoom. I can't speak for Doom 1, but it does indeed seem that BD has included some of the console-specific levels for Doom 2.

The first one I found was The Mansion, which can be accessed from Suburbs. I stumbled on that accidentally and hadn't realized they had added any levels until I found that. Apparently there is another secret level hidden in that one, called Club Doom; however, I didn't find it during my playthrough. Other than that, they have added two other console levels in between Gotcha! and Nirvana: Hell Gate and Hell Bastion, which are both from the Playstation version of Doom 1.

I thought The Mansion was quite a cool level, although wasn't so impressed with the other two. I am currently on The Spirit World, so close to the end of Doom 2. If I find any other console levels, I will let you know. It's possible they may have added in Redemption Denied towards the end, which was the last level in the Playstation version of Doom 2.

I haven't played Project Brutality, so I don't know what that is. Presumably a different mod?

These are gameplay mods aka "weapon WADs", so, аs Time4Tea stated earlier, there are very few "new" levels, mostly ported from consoles.
If you want a complete episodes intended specifically for "Brutal" mods they are exist too. But as a separate levelpacks. Brutality had an offical episode, if I am not mistaken, and Brutal had something similar from third-party developers.

You should ask for them at places where mods like these are in favor, like (G)Zdoom forums.
