Divinity: Original Sin patches either freezes at the end or say something about wrong version. I make sure its the version before the patch I'm trying to use. I have to end up uninstalling the game then re installing every patch. Even then it's not the latest version. Am I doing something wrong here...?

For how long do you wait at the end freeze? I updated the latest one the other day, and saw it was frozen at 90-95% ish, but I just let the window be for a minute or two and when I looked back it was done. Maybe you just need to wait a bit?
Patches can take a few minutes to run (and appear to freeze while doing so) due to the amount of data they have to modify.

If you install process monitoring software like Process Hacker or Process Explorer, you use them to confirm that the patch is running by monitoring its I/O activity (you will need to configure these programs to display a column showing total reads+writes).
I'll see if that is what's happening.
Worked. It was saying not responding in the task manager, so that's why I was confused.
